White Chocolate, Macadamia & Cranberry Cookies


So how about some cookies for the weekend? Yay! I just made the perfect cookies with white chocolate, macadamia and cranberries! It`s an easy and very quick recipe, so let`s get started!

For 10 big cookies you`ll need:

  • 250 g butter
  • 1 1/2 cups raw caster sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 1/2 cups self-raising flour
  • 2 eggs
  • 1/2 cup white chocolate bits
  • 1/2 cup dried cranberries
  • 1/2 cup chopped macadamia nuts

Start with preheat the oven to 350 degrees (180 Grad). In a large bowl, beat the butter, the sugar and the vanilla extract until creamy. Then add the eggs to the bowl and beat until fluffy.Sift the flour over your mixture. Then add the tasty cranberries, macadamia nuts and white chocolate bits to your cookie dough. Use two baking trays and line them with baking paper. Now you can roll your cookie dough into 10 balls. Place the balls on your baking trays. There should be enough room between them! Use the palm of your hand and flatten the cookie balls. Bake your cookies for 15 minutes. They should be still very soft when you remove them from the oven.
