Marshmallow Chocolate Cupcakes

Happy Tuesday everyone! The monday is behind us, so lets celebrate this fact with some marshmallow chocolate cupcakes. If you guys have read this blog before, you probably know that the recipes looks more difficult than they are. Cause I`m always looking for an easy way to bake some sweet treats like these cupcakes.


For 12 Marhsmallow Chocolate Cupcakes you’ll need:

  • 2 1/2 cups all purpose flour
  • 2/3 cups sugar
  • 2/3 cups butter
  • 3 eggs
  • 1/2 teaspoon baking powder 
  • 1/2 teaspo0n vanilla extract 
  • a dash of milk
  • tablespoons cocoa

Start with preheating the oven to 350 dregrees (180 Grad). Then for your chocolate dough, place the butter and sugar in a stand mixer bowl and start mixing the ingredients on medium speed. Then you can add the eggs and cream all together for about 2 minutes. In a second bowl mix the flour, baking powder, vanilla extract and the cocoa. Then add the mixture from this second bowl to your first bowl and cream the chocolate dough for the cupcakes on high speed for a few minutes. Then you can add a dash of milk.  Use a normal muffin baking plate and add some paper moulds. Place  your chocolate cupcake dough in the moulds of your baking pan. Bake your chocolate cupcakes for about 15 minutes. 

For the Marshmallow Cup you’ll need:

  • 3 egg white
  • 200g icing sugar
  • 1/2 teaspoon baking powder

Mix the ingedients for your marshmallow frosting in a bowl and beat the mixture over a saucepan of boiling water until the volume of your frosting duplicate (that takes about 10 minutes). Now you can arrange the marshmallow frosting onto your chocolate cupcakes. Put the Cupcakes in the fridge until the frosting is stiff. Then, as a last step, you can melt some milk chocolate chips and dunk your marshmallow chocolate cupcakes with (with the frosting) into the melted chocolate.
